spinach cobb salad

This was such a great post-workout salad for lunch!

Spinach Cobb Salad

  • Organic Spinach
  • BBQ Chicken (leftovers from last night)
  • 1/2 of an Avocado
  • A handful of organic grape tomatoes sliced
  • 2 organic free range hard boiled eggs
  • 2 pieces of uncured bacon 
  • 3 artichoke hearts cut up 



How to get the perfect Hard-Boiled Eggs:

  • Place eggs into a pot and add cold water to cover the eggs completely w/ some salt
  • Bring to a boil
  • Turn off heat once it boils, and let the eggs sit in the hot water for 15 minutes (set your timer!)
  • Drain hot water
  • Shake pot to crack eggs
  • Cool w/ cold water
  • Peel!
